I used bginfo from Microsoft formerly Sysinetnals (http://www.microsoft.com/technet/sysinternals/Miscellaneous/BgInfo.mspx) to set the background information.  To record the demo I used Camtasia from TechSmith (http://www.techsmith.com/camtasia.asp).  I evaluated a number of screen casting options including options and I believe that Camtasia is by far the best option out there.
